When we were in Finland in early December, my mom had baked a tosca cake. I can't even remember when I last had eaten that cake and hers was so delicious. We got to take home some pieces too, which we then ate with a cup of cappuccino. Thanks, dear mom!
Toscakaka
kakbotten:
2 ägg
1,5 dl socker
2,5 dl vetemjöl
1 tsk bakpulver
150 g smör, smält
0,5 dl mjölk
glasyr:
75 g mandelflarn
50 g smör
1 dl socker
0,5 dl grädde
Vispa ägg och socker fluffigt. Blanda ner vetemjöl, bakpulver, smör och mjölk till en smet. Häll smeten i en form (22cm) klädd med bakplåtspapper. Baka kakan i 175 grader i ca 25 minuter. Blanda alla ingredienserna till glasyren i en kastrull. Värm försiktigt under omrörning tills allt blandat sig och tjocknat. Häll glasyren över kakan och bred ut den. Grädda kakan ytterligare ca 10-15 minuter eller tills glasyren fått färg.
Tosca Cake

0.5 dl milk
glaze:
75 g almond flakes
50 g butter
1 dl sugar
0.5 dl cream
Beat eggs and sugar fluffy. Mix in flour, baking powder, butter and milk into a batter. Pour the batter into a baking pan (22cm) lined with parchment paper. Bake the cake at 175 degrees for about 25 minutes. Mix all the ingredients for the glaze in a saucepan. Heat gently with stirring until everything is mixed and thickened. Pour the glaze over the cake and spread it out. Bake the cake for a further 10-15 minutes or until the glaze has a golden color.

Älskar toscakaka, en av mina favoriter .Här har vi Breads Bakery, som ägare (som också har bageri i New York)är ursprungligen från Danmark, och de har små pajer, eller en större lång paj, som de kallar Toscana, men det är nog samma sak, och så gott:)
